Mini Plum Puddings
I did promise to share this Christmas favourite of ours a few days back but time seems to be slipping away from me lately. There's just never enough hours in my day...how does one get more?? I'd love to know!
I did finally get to make the plum puddings today...well yesterday now as its 1:30 in the a.m. ... with some help from Ebony so I could take some pics along the way to share.
There really is no exact measurements to this quick and easy recipe. It's all just thrown together.
You do need:
* 1 small fruit cake...I usually just use the homebrand dark fruit cake but since Kevin brought the ingredients home for me he always gets the dearest stuff he can find *eyeroll*
* 1 small packet of mixed dried fruit....this time he got the largest but at least it was homebrand ;)
* white chocolate melts
* 1 packet of jubes or fruit rings...you only need the red and green ones
* brandy to taste
Crumble the fruit cake up into a mixing bowl.............
Add the dried fruit. Out of the large 1 kilo bag I had I used roughly 300grams ....
Add enough brandy to taste...I used about 150mls...and mix roughly. And no I dont actually use that spoon to mix with....it was just a pretty decorative one I used for the shot;)
Roll into little balls. Its actually more like squishing into little balls. It can get a little messy as shown by Ebony's hand......
Melt some white choc melts over a pot of hot water or in a microwave......
Drizzle the white choc 'custard' over the top and add some chopped up red and green jubes to decorate.
Once the chocolate has set...serve and eat. YUM!
I store mine in a container in the fridge. They're really yummy cold. I'm sure with the brandy in them they would last quite a while but in our house they last a day or two. Kev can (and usually does) sit and eat nearly the whole batch himself!
I think the best part of Christmas is the fruitcakes and plum puddings (oh and the candy canes)...although I know a certain red head and a zombie gunslinger who will disagree there...but they may not be quite normal ;)

Lol!!! I just did a post on making easy fruitcake and my version of the Plum Pud Truffles...I really cheated this year!
They got gobbled up tho just as fast as the usual fruit/grog filled ones.
